Why you can’t order macarons for today or tomorrow
We never bake ahead — every box is made for your order. Here is what happens to your macarons over those two days.
People often ask whether they can pick up a box tonight or tomorrow morning. The honest answer is no — and it isn’t a whim. The earliest date in the order form is two days away, because that is exactly how long it takes for macarons to turn out the way we love them.
Only fresh, never from stock
We have no shop window full of boxes waiting for a buyer and no freezer of ready-made shells. Every batch starts when your order arrives: for your flavours, your set and your date. That way the macarons reach you at their very best.
What happens over two days
- Day one — the shells. We whip the meringue, fold the batter, pipe the halves and let them dry until a thin skin forms. Then we bake them low and slow — that is how the lacy “foot” appears.
- Day one, evening — the fillings. We cook the ganache, berry curd and salted caramel. A filling needs a night in the cool to set and open up its flavour.
- Day two — assembly and maturing. We sandwich the macarons and leave them in the fridge for at least a day. The filling shares its moisture with the shells: they stay crisp outside and turn soft and chewy inside.
- The big day — the box. In the morning we pack the macarons and hand them to you or deliver them across Vlorë.
A macaron assembled an hour ago is a cookie with cream. A macaron that has rested for a day is a dessert.
Why we don’t bake ahead
We could bake in advance and freeze — many do. But frozen shells lose their crunch and berries lose their brightness. We chose to make less, but only fresh. Every box is assembled by hand, which is also why we make a limited number of macarons each day.
How to order in time
- Place your pre-order at least two days ahead — the calendar in the form will show the nearest available date.
- For holidays, birthdays and weddings it is best to book a week ahead: those dates fill up first.
- The large 45-piece set is easier to order in advance — we pack it into three boxes.
- If you are in a hurry, message us on WhatsApp and we will suggest the nearest option.
